One of my two favorite pies of the fall/winter season is sweet potato pie and apple pie. I thought I would make the two together but maintain their own identity, I made a Sweet potato( gelatin) with apples ( poached) pie with a caramel cinnamon cream sauce. I wrote this down two years ago and I have the equpitment now and I am so happy it came out how i wanted it.
Caramel poaching the apples and one cinnamon stick is more than enough
This is the sweet potato gelatin, i juice one sweet potato add 1/2 cup brown sugar, 3 tbsp of brown butter, and 2 tsp of nutmeg and a pack of unflavored gelatin or 4 sheets of gelatin sheets.
Here the final result, i took the caramel water whisk in 2 tbsp of butter and 1/4 cup of butter, once it cool i beat powder sugar until it thicken.
